October is HERE! Finally... all of us pumpkin lovers can officially unleash the pumpkin beast. What better way than to celebrate with a warm, delicious, decadent PSL cupcake? I think that sounds perfect to celebrate day 1 of the 31 Days of Pumpkin challenge.
I'm so excited to share this recipe with you! These cupcakes are light, fluffy, moist and melt in your mouth. I couldn't be happier to indulge in this recipe on the first day of this challenge. They turned out super delicious.
- 1 spice cake mix
- 1 15oz can of pumpkin pure
- 3 large eggs
- 1/3 cup of oil
- 1/3 cup of brewed coffee, cooled
Here's what you need for the frosting:
- 1/2 cup of unsalted butter, softened
- 4 oz of cream cheese, softened
- 2 cups of powdered sugar
- 1 tsp of vanilla extract
- Cinnamon to sprinkle on top
DIRECTIONS:
Combine the cake mix, pumpkin, eggs, oil, and coffee in a mixing bowl. Beat on low for 1 minute, and then beat on medium for 2 minutes. Spoon into 24 cupcake liners. Bake at 350* for 18 minutes. Cool completely.
In a large bowl, beat together butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract. Ice the cupcakes and sprinkle cinnamon on top for garnish.
